THE BEST EASY CREPES

I think crepes are one of my favorite desserts. Growing up in Germany one of my favorite treats at the Christmas market was warm crepe, slathered in Nutella and dusted with powdered sugar. I loved watching them pour the batter on their griddle and using a little wooden spatula to flatten it out. For years I tried lots of different crepe recipes but nothing compared to those crepes. Until now! I love making this crepe batter in my Blendtec. These crepes always come out so tender and silky. The practically melt in your mouth.  They are not the same if you try to mix the batter by hand. It doesn’t develop the same texture and smoothness.

First, add all the ingredients to the Wildside jar and use the Salsa button to blend the batter up.

Your batter will be nice and smooth but you will notice lots of bubbles. Put your entire jar in the refrigerator for 20 minutes to allow the bubbles to settle so your crepes don’t end up with holes. I use this time to prepare the rest of the breakfast and toppings.

Heat up a nonstick pan over medium heat. You will pour approximately 1/4 cup for each crepe. Pour the batter in the middle of the pan, and then tilt and swirl the pan to make the crepe.

Cook for 1 minute then carefully peel up the edge with a spatula and flip over and continue cooking for 30 more seconds. Fill the warm crepe with your favorite toppings and serve.

We have been having a tradition now of weekend crepes. Either Saturday or Sunday morning we all gather in the kitchen and I cook the crepes, my husband prepares the toppings and my kids eagerly sit at the kitchen island waiting to enjoy the crepes. It’s such a fun breakfast tradition. Everyone has different varieties they love. My little girl loves bananas, strawberries and dipping her crepe in raspberry sauce. My son loves blackberry, strawberry, and banana with Nutella and whipped cream. My husband loves to try new variations and each one becomes his “favorite” for that day. I also love to try different combinations of fruit and syrup, but my favorite is still Nutella and powdered sugar.

Crepes

4 eggs
1 cup water
1 1/2 cup milk
2 cups flour
1/4 cup sugar
1/2 cup butter, melted and cooled

Yields approximately 24-30 crepes

In the wild side jar of your Blendtec blender, add the water, milk, eggs and butter. Add the sugar and flour last. Select the salsa feature and blend until smooth. Refrigerate for 20 minutes to allow bubbles to settle. Prep toppings while the batter settles. Strawberries, bananas, nutella, etc.  In a large frying pan add 1/4 cup of the batter and tilt pan and rotate in a circle to form the crepe. Cook for about 1 minute, then gently lift the side of the crepe with a spatula, and carefully flip over, cooking for another 30 seconds. Repeat with all the batter. Serve with your desired toppings. Enjoy!
