SPAGHETTI WITH BROWNED BUTTER AND MIZITHRA CHEESE

The combination of browned butter and mizithra cheese is one of my family’s favorite ways to eat spaghetti.

Have you ever eaten at the Old Spaghetti Factory? I hadn’t until I met my husband. The Old Spaghetti Factory is the gathering place where my husband’s family celebrates many family occasions.

At first I really was not excited to eat there. Confession- I used to consider myself a spaghetti hater. Yup, hated it.  Putting aside my thoughts on spaghetti, I reluctantly went and decided I would give it a chance. After all, they do have a few other options besides spaghetti. (But getting anything other than spaghetti at The Old Spaghetti Factory seems like a shame. You aren’t eating what their restaurant is named after?!)  My husband told me his favorite was the spaghetti with browned butter and mizithra. I hadn’t even ever heard of mizithra cheese before, but I was willing to give it a try.  I’ll admit I thought it was okay the first time I had it, but I wasn’t suddenly going to fall in love with spaghetti or anything. Fast forward to present day and after many more dinners and lunches there I can honestly say it’s one of my favorite meals to eat. And since both my little ones declare spaghetti to be their favorite meal, we eat spaghetti a lot around our house.

Homemade spaghetti with mizithra and browned butter is a pretty easy meal. You cook some noodles, brown butter and toss together mizithra cheese with parmesan and parsley. We love to serve it with a meat sauce as well because we like to have about half meat sauce and half browned butter and mizithra. If you haven’t ever browned butter before it’s super easy and not something to be intimidated about. You really just melt butter over medium heat.  It adds such a yummy, nutty flavor to the spaghetti.

Mizithra cheese is usually found in the speciality cheese aisle of the grocery store by the fresh mozzarella or brie. I have found it at my local Kroger store, Winco and Walmart. Usually it’s a little wedge with blue packaging. I use a small holed grater to grate the cheese very finely.

Spaghetti with Browned Butter and Mizithra 

1 box spaghetti noodles (1 pound)
1 stick salted butter (1/2 cup)

Cheese-
1 cup grated mizithra cheese
1 cup fresh grated parmesan cheese
1 tsp dried parsley

Cook the spaghetti noodles according to the package directions, drain and set aside.

Meanwhile in a small saucepan begin to melt the butter over medium heat. The butter will melt completely and then begin to foam. The foam will change from a light yellow color to golden and then to a rich brown. Stir the butter occasionally and remove from heat immediately once it’s reached the toasted brown color. Depending on your stove temperature this usually takes about 5-7 minutes. You will notice it has some brown bits which are the milk solids that have cooked faster. Strain these out if desired. I just leave them in.

Mix the grated mizithra, parmesan and dried parsley together in a  small bowl. I usually use a container with a lid so I can save the extra cheese in a my fridge for about 2 weeks.

To serve-

Toss the cooked spaghetti noodles in the browned butter. Top with desired amount of the cheese mixture. Enjoy!
