I think you might be sensing a theme. I’ve been loving Korean-inspired dishes lately (see my Korean beef bulgogi recipe HERE and my chicken cup-bop copycat HERE).  And I love this one one especially because it’s such a fast, easy dinner. I first made it when I was running low on groceries one night and I was in the usual conundrum of what can I make with what I have? I usually keep some ground beef in the freezer and always have a carrot or two hanging out in my fridge. I had originally planned to make some stir fry but I saw this recipe and thought I would give it a try. It was an instant favorite.  My kids love the sauce because it’s nice and sweet so there are no complaints when I make this for dinner regularly now. You can always add a little bit of red pepper flakes for some spiciness to your own bowl. The carrots aren’t a necessity, but they add a nice sweetness and crunch to the dish, plus provide a vegetable for the meal. I always think fresh ginger is necessary but in a pinch you could use ground ginger instead. My favorite tip is to buy fresh ginger, peel the outside skin off and freeze it. It’s so much easier to grate and you always have it when you need some! We love to serve this meal with potstickers and little bit of dipping sauce.

Quick Korean Beef

1/4 cup brown sugar
1/4 cup soy sauce
2 tsp sesame oil
1 pound ground beef
1 tsp garlic powder
1 tsp fresh grated ginger
4 large carrots diced (about 2 cups)
3 green onions diced

In a large pan over medium heat brown ground beef, seasoning with the garlic powder. Drain grease and add the carrots and ginger. In a small bowl, combine the brown sugar, soy sauce, sesame oil. Pour the mixture over the beef and allow to simmer for 5-6 minutes, until carrots are tender-crisp. Add the green onions. Serve over rice and enjoy.
